St Patrick's Day Irish Soda Bread Recipe

This is not our ordinary blog, but it is St. Patrick's Day and after a 2 year hiatus, the parades are back and the streets are painted with green lines here in the Northeast. We here at SERVPRO of White Plains would love to put a spin on our normal blogs and add bit of The Luck of the Irish. We would like to share an Irish Soda Bread Recipe that has been passed down 4 generations.
4 Cups AP Flour, 3 TBL. Sugar, 1 TBL. Baking Powder, 2 TSP. Baking Soda, 1 TSP Salt, 1 Stick of Cold Butter cut in to small pieces or grated, 2 Cups of Raisins or Currants, 2 TBL Caraway Seeds, 2 Eggs, 1 Yolk for brushing the bread, and 1 1/2 Cups Cold Buttermilk. Mix the dry ingredients and add butter, cut in with pastry cutter or fork. Beat the 2 eggs and add to buttermilk. Mix into dry ingredients and pour onto floured board. Knead 15 times and put into a greased glass mixing bowl. Cut a cross on top and brush with egg yolk. Bake at 350 for 1 hour. Let cool slightly and serve with plenty of cold butter and or your favorite jam. Enjoy!
